But it was time to add another friend to the list. This bread pudding is so easy to make and so delicious that I have been making it at least once a week. I don't know for you, but for me as much as I love making and eating banana bread, it can get a little bit old after the 3rd one, even smeared with peanut butter or nutella!!! So I decided to try and make pancakes (I have kids that will eat pancakes at every meal!!) with all my lonely bananas.<br />

So here I am, googling recipes for banana pancakes and all the recipes I found and liked were using sliced bananas on top of the pancakes, which my kids will never eat, what I wanted was pancakes with mashed bananas. So I decided to make my own recipe with what I knew about pancake making. So here goes...<br />

<b>Banana and chocolate chips pancakes </b><br />

1 1/2 cup flour<br />
1 tbsp. of sugar<br />
1 1/2 tsp baking powder<br />
1 1/12 cup buttermilk<br />
1/2 cup mashed banana<br />
1 egg<br />
2 tbsp. melted butter<br />
1 tsp vanilla<br />
1/2 cup chocolate chips<br />

In a bowl mix all the dry ingredients, add the chocolate chips. <br />

In another bowl whisk the egg, add the mashed banana, the buttermilk, melted butter and vanilla. Pour into dry ingredients and mix until just blended, don't worry if you have some lumps in your batter!!!<br />
<br />
Using a ladle pour pancake batter in pools 2 inches away from one another, you can make them as big or small as you want...When pancakes have bubbles on top and dry around the edges flip then over, cook them for another minute or so. Repeat until no more batter is left. <br />
<br />
And serve warm.<br />

I’m very happy to share with you today’s recipe for Nutella brownies, cause you know Nutella makes me happy!<br />

As you can see these brownies are more cakey that fudgy and that's the way I like my brownies, but they are oh so delicious you will not mind at all!!<br />

<strong><span style="color: #073763;">Nutella and pecans brownies</span></strong><br />

<span style="color: black;">3 eggs</span><br />
100 gr - 3/4 cup of chopped dark or milk chocolate<br />
100 gr - 3/4 cup of Nutella<br />
150 gr - 10 tbsp of butter <br />
100 gr - 3/4 cup (less or more depending on your sweet tooth!!) of sugar<br />
1 teaspoon of vanilla<br />
80 gr - 1/2 cup of flour<br />
1/2 teaspoon of baking powder, that's what makes it cake like, but you can omit it.<br />
50 gr - 1/3 cup of chopped pecans<br />
<br />
Preheat oven at 400F (200C)<br />
<br />
Grease a 8x8 pan<br />
<br />
Roast the pecans in a warm pan, keep an eye on them so they don't burn!!<br />
<br />
In a bowl over a pan of simmering water (called bain-marie) melt the butter then add the Nutella, mix well. Take off the heat and add the chopped chocolate<br />
<br />
In another bowl beat the eggs and sugar until white and frothy, add the chocolate mix the vanilla and the flour, sprinkle the pecans on top and gently mix.<br />
<br />
Pour into the prepared pan and bake for 20/25 min.<br />
<br />
When cool cut into squares and using a little bit of Nutella as glue decorate the brownies with a half pecan.<br />
<br />
You will not regret making these they are scrumptious!!!<br />

The change of color in leaves, the beautiful mums on every body's doorsteps, the cooler weather, and most especially the food! Apples, spinach, cauliflower and the variety of squashes are at their peaks right now. <br />

Butternut squash is a comforting fall/winter soup and is one of my favorites.
I love it's sweetness, it's velvety texture. I have found winter squash to be so versatile and can be use in risottos, soups, pasta sauce, and while searching the blogosphere found recipes of ice cream, crisps and even smoothies!!!!<br />

Heat olive oil and a little knob of butter (I didn't say it was a skinny soup!!!) over medium heat, add leek, garlic and ginger and saute for 3/4 minutes.<br />

I planted it 2 years ago just to show the kids how vegetables grow, then I got hooked and just love to go in my garden and pick whatever is ready. <br />Line a pan (I used a quiche pan) with parchement paper top with your favorite dough, line again with parchment paper, and cover the bottom with pie weighs (I use chickpeas). Bake at 375F until the dough looks firm and dry about 15 minutes.<br />

Remove the weight and parchment and continue baling for another 10 minutes. Pour all that loveliness into the dough line pie pan. Bake until the cheese is melting and the egg mixture is cooked.<br />

Today I would like to share with you one of my favorite summer salad. This Mediterranean salmon salad is packed with flavors and so delicious it became one of my family's favorite dish, if you don't count my daughter picking at the veggies to catch only the salmon and pasta!!!<br />
<br />
The first step is to make the recipe for the dressing. Make it about an hour before dinner so the flavors have time to blend. You will need,<br />

<br />
<li>1/2 cup olive oil</li>
<li>3/4 cup red wine vinegar</li>
<li>1-1/4 teaspoon dried oregano</li>
<li>1-1/4 teaspoon dried basil</li>
<li>1-1/4 teaspoon garlic powder</li>
<li>1 teaspoon onion powder</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon pepper</li>
<li>1 teaspoon Dijon mustard</li>

Whisk all ingredients together and mix into salad just before serving<br />
Then preheat the broiler and sprinkle the salmon with salt, pepper, & oregano. Place under broiler for 10-15 minutes, or until center is cooked.<br />

Heat 2 tablespoons of olive oil in a heavy-based saucepan, when hot, brown the beef stirring occasionally. Add 3 chopped onions and 1/4 teaspoon of crushed pepper flakes (to give it some bite) and continue to fry. When well browned add 1 heaping tablespoon of curry powder, 1 teaspoon of cumin powder, 1 1/2 teaspoon of tumeric powder, 3 garlic cloves chopped, 1 tablespoon (or more) of grated ginger and 3 cardamome pods. Let all the spices cook for a minute until fragrant then add a 14 oz can of crushed tomatoes and 2 BIG tablespoons of plain yogurt. Let cook until meat is tender (I cook mine in my pressure cooker and it takes only 20 minutes). At the end add hopped fresh coriander and serve with basmati rice and naans. <br />

I doubled the recipe since I have to feed 3 children and a bottomless stomach husband!!<br />

2 lbs potatoes cut into into1/4 in slices<br />
2 large onions, thinly sliced<br />
1 tbsp chopped fresh thyme<br />
1/4 stick of butter<br />
1 tbsp olive oil<br />
2 large bacon strips chopped, I used pancetta.<br />
4 large chicken joints, halved<br />
2 1/2 cups of chicken stock<br />
1 bay leaf<br />
salt and ground black pepper<br />

Preheat the oven 300F<br />
<br />
Make a thick layer of half the potato slices int the base of a large, heavy casserole, then cover with half the onion. Sprinkle with half the thyme and salt and ground black pepper.<br />
<br />
Heat the butter and the oil in a large frying pan, then brown the bacon and chicken. Using a slotted spoon, transfer the chicken and bacon to the casserole. Reserve the fat in the pan. When cool, store in the fridge and use another time for roasting potatoes (yummy more potatoes!!!)<br />

Tuck the bay leaf in between the chicken pieces. Sprinkle the remaining thyme over, then cover with remaining onion, followed by a layer of overlapping potato slices. Season.<br />
<br />
pour the stock into the casserole. Brush the top layer of the sliced potatoes with the reserved fat from the frying pan, then cover tightly and cook in preheated oven for 2 hours, until the chicken is thoroughly cooked and tender.<br />
<br />
Preheat the broiler to high. Uncover the casserole, place under the grill and cook until the slices or potato are beginning to brown and crisp. Serve hot.<br />

I made my next recipe at a GNO last week and I had a lot of demands for the recipe so here we go. Those bars come with a warning though, they are highly addictive and highly high in calories !!!! Preheat oven to 325°. Butter a 9″-square baking pan. Line pan with parchment paper, leaving enough to extend over the sides. Butter the parchment paper. <br />

To decorate with drizzled chocolate, place chocolate in a microwave safe dish and microwave in 30 second intervals moving the chocolate around between. Then use a spoon to drizzle the melted chocolate over the cake.<br />

On to the makeover part. Now I don't for you but I always find myself rearranging or redecorating rooms and what not in my house. My kitchen cupboards are my latest victims. I decided for now to just open up the cupboards by taking down some of the doors, I know it's not perfect but it really gives another look, and feel in to kitchen.<br />

And this is what it looks like now, I removed one shelf and put some of my cooking books, and put the towels in a basket, which looks neater and cuter!! I played a little bit with the back of the cupboard and put toile tissue paper I had in my basement, just to see the effect, and I have to say I kind of like it. <strong><u>Roasted potatoes with lemon</u></strong> :<br />

1 pound potatoes, washed and cut into wedges, skin left on<br />
1/4 cup olive oil <br />
2 tbsp melted butter<br />
Zest and juice of 1 lemon <br />
3 cloves garlic, crushed <br />
1 tsp dried oregano <br />
salt <br />
fresh ground black pepper <br />
<br />
Wash and boil the potatoes in lightly salted water for 15 minutes. Drain.* <br />

Preheat oven to 350F. <br />

In a small bowl, mix together the oil, butter, lemon zest, lemon juice and oregano. <br />
Pour oil mixture over the potato wedges and toss to coat evenly. <br />

Spread on a baking sheet, then season with salt and pepper. <br />

Cook, stirring once or twice for 30 or so minutes or until they are tender. <br />

For this recipe you will need caster or superfine sugar, if like me you don't have any on hand, make your own. Toss regular sugar in a food processor fitted with a metal blade for a few minutes. You can try a blender, but the results aren't quite the same.<br />

Mix the brown sugar, apples and lemon juice, and tip the mixture into the ovenproof dish, spreading it out evenly. <br />

Spoon the sponge mixture over the top and spread evenly. A trick to make this easy is to use an off set spatula. Run the blade under warm water to make it even easier.<br />

This chocolate cake is one of my all time favorite, easy, simple, and delicious. I make it for all special events, like birthdays, girls night out, pot luck dinners with friends, and it's always a crowd pleaser. You can serve it as is or with a raspberry syrup, vanilla custard, ice cream, or make it extra special by icing it with a chocolate ganache (a mixture of chocolate and cream) and decorate it with fruits or, why not, with flowers.<br />

Since Thanksgiving is just around the corner, I suggest you give it a try and you will be sure to please your guests by serving that scrumptious chocolate cake, and it's a nice change from lets say a pecan or apple pie (well in my opinion!!!), and it's less work.<br />

Preheat oven to 425F<br />

Melt the chocolate and butter on a double boiler. When melted remove from heat and quickly beat in the egg yolks. Add the sugar, flour and almond, mix well.<br />
<br />
Beat the egg whites with a pinch of salt into soft picks and delicately fold them into the chocolate mix.<br />
<br />
Butter a 8 inch round pan, pour the batter and bake first at 415F for 10 minutes then turn down the oven to 300F and bake for another 10/15 minutes. Be careful to not over bake your cake or it will end up hard, you want it on the underdone side.<br />
<br />

Last week one of them asked for meatloaf, but it came with a warning "but mom can you make a different one this time!!!!". 1 tablespoon prepared horseradish ( Iskipped this ingredient)<br />
1 tablespoon Dijon mustard<br />

3/4 teaspoon dried oregano <br />

1/4 teaspoon salt<br />

1/4 teaspoon freshly ground black pepper<br />

1 1/2 pounds ground sirloin<br />

1 large egg, lightly beaten<br />

1. Preheat oven to 425°.<br />

2. Heat a skillet over medium-high heat. Add breadcrumbs; cook 3 minutes or until toasted, stirring frequently.<br />

3. While breadcrumbs cook, heat a large skillet over medium-high heat. Coat pan with cooking spray. Add onion and garlic; sauté 3 minutes. Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Shape into 6 (4 x 2-inch) loaves on a broiler pan coated with cooking spray; spread 2 teaspoons ketchup over each. Bake at 425° for 25 minutes or until done.<br />

Preheat your oven at 375F<br />

In the same mixing bowl put 1 1/3 cup of flour, 1 whole egg and 6 egg yolks (in the recipe it asks for 175 gr of eggs), sugar and salt, mix for a few minutes, then add the sourdough. Mix again for another 10 minutes at speed 1 on your Kitchen Aid mixer.<br />

Add 1 stick of soft butter. At this stage I switch from the paddle to the hook on the mixer. And mix for another 20 minutes !! I know it's long and that's why having a mixer makes it so much easier.<br />

Put the dough in a large bowl (large enough so the dough can rise easily) cover with saran wrap and put it in the fridge overnight.<br />

Obviously mine went a little bit over board, but that's OK. Paint the top with an egg wash. Put a small dish of water in your preheated oven and in goes the brioche. Bake for 30 minutes, 10 minutes before the end of cooking cover the brioche with a sheet of aluminium foil. Then leave it an extra 5 to 10 minutes in your oven with the oven turned off. <br />
<br />
Always keep an eye on it during the cooking process though, all ovens are not equal, and from one oven to another you will have to adjust the temperature of it.<br />

Gazing at the window and as the weather is getting colder we all think of one thing, well I think of one thing, a warm, savory and rib sticking (and thighs sticking also!!) stew simmering in a pot. And the easier the recipe the better !!! This one just ask for a little bit of work but worth the dish, and the saffron in it make makes it extra special.<br />

2 tsp coriander seeds<br />
1 tsp cumin seeds<br />
6 ripe tomatoes<br />
3 tbsp olive oil<br />
6 of each brumsticks and boneless chicken thighs<br />
1 lb of small potatoes<br />
4 sticks of celery, chopped<br />
2 large white onions, chopped<br />
3 bay leaves<br />
250 ml (9fl oz) white wine<br />
Good pinch of saffron<br />
75 gr (2 3/4 oz) black olives halved<br />
500 ml (18fl oz) chicken stock<br />
<br />
Preheat the oven to 350F.<br />
<br />
1) Dry-fry the seeds in a pan for 1-2 min until fragrant, then grind them (personally I just used the already ground spices) .<br />
<br />
2) Boil the tomatoes for 2 min. Drain and cool before skinning. Cut in half, remove seeds and chop (again here I went the easy way and used chopped can tomatoes).<br />
<br />
3) Heat 1 tbsp of olive oil in casserole dish and brown the chicken in batches then transfer in a plate.<br />
<br />
4) Heat the rest of the oil, add the potatoes, celery, onions, bay leaves and ground spices and cook until de veggies are browned. <br />
<br />
5) Add the chicken, chopped tomatoes, wine, saffron and olives, and boil rapidly for 2 min. Pour the stock and season.<br />
<br />
